A Week of Low Carb Eating: Sunday

I did a little experimenting today. I’m a big fan of The Melting Pot, and prior to undertaking this low-carb exercise, my wife and I used to visit quite regularly. In case you aren’t familiar with The Melting Pot, it is a fondue restaurant that has two styles of cooking: traditional oil-based fondue and broth-based fondues. I’m very partial to a particular broth-based style that is done with chicken stock and red wine. Today, I tried to replicate this experience at home on the stove top, preparing a chicken, shrimp, and mushroom boil using chicken stock and spices as my boil. I’m proud to say the results were a complete success, and my menus are, as always, after the jump.

A Week of Low Carb Eating: Saturday

Sometimes, you’re too busy to eat right. I didn’t fall off the low-carb wagon, but yesterday was one of those days for me. I was running pretty much as soon as my feet hit the floor, and didn’t stop until after a Halloween party at a MBA classmate’s house. I pretty much have to share my costume choice with you guys. I went as Chris Farley as Matt Foley, Motivational Speaker from Saturday Night Live. My promise to myself is that next Halloween, I won’t be able to pull that off. Anyway, because of all the hustle and bustle yesterday, I didn’t really have any regular meals after breakfast, but I stayed low-carb all day, even as I was snacking. What did I eat? You’ll find out after the jump!

A Week of Low Carb Eating: Friday

The work week winds down on our week of low-carb eating. Today I finally weighed myself for the first time since the beginning of my low-carb eating. Today I weighed in at 417 pounds, roughly an 18 pound weight loss in a little less than two weeks of low-carb eating. I know that some of this weight loss is due to water weight loss, but I’m still pretty happy. The initial success gets me pumped for the long journey that lies ahead. To celebrate, I treated myself to a big steakhouse style meal for dinner, minus the rolls and potatoes. The whole meal plus the rest of the day’s menus are after the jump!

A Week of Low Carb Eating: Thursday

We’re passing the halfway mark in my week-long review of my Induction menus. Today, I’m going to look back at what was a typical eating day when I wasn’t doing the low-carb thing, just as a way to compare my destructive previous eating behaviors with the low-carb lifestyle. I am warning you, this post is not for the timid – you’re going to see just how a morbidly obese person eats, and what you see may scare you. I will admit that there is probably an emotional component to this eating behavior. Like many overweight people, food has been a source of comfort for me in the face of the slings and arrows of daily life. Almost two weeks into the low-carb experience, I actually find that my mood is much better, and that the less time I spend thinking about food, the more time I have to think about what matters: my job, my personal relationships, my family, etc. Menus and more on the other side!

A Week of Low Carb Eating: Wednesday

The week of induction menus continues. A common misconception about the Atkins diet is that all you eat is meat. This is probably due to the “amazing” fact that many media articles and television shows immediately center their Atkins-diet related reporting on: When you’re trying to lose weight on the Atkins diet, you can eat the steak, but you can’t eat the potato. What tends to get lost in the shuffle is that you can replace the potato with pretty much all the leafy green vegetables you care to eat. So far this week, I’ve consumed 5 or more “servings” of vegetables every day. As always, the menu and more is after the jump!

A Week of Low Carb Eating: Tuesday

More low-carb eating action. I missed breakfast today due to plastic bag with a hole in it. Whoever found my breakfast bar, I hope you enjoyed it! If you’re not big on washing dishes, you’re probably interested in a product I used today, and will use several times this week. Earthbound Farm produces 5 ounce containers of pre-washed organic salad mix in several varieties. I am a big fan of simply mixing up a salad in these containers, and was, even before I decided to go low-carb. I toss in some protein, maybe some tomato slices, and salad dressing, and the only dishes I use for the whole meal are a fork, a knife (sometimes) and a cup! Today’s salad and more are after the jump!

A Week of Low Carb Eating: Monday

Obviously, I meant to get this information up sooner, but this week, I’m keeping track of my meals as I do the Atkins “Induction” phase. I’ll include three meals and mid-afternoon snack for each day. In addition to the menu I record here, it’s important to note that I’m drinking a lot of plain water (at least 128 ounces a day – if that sounds like a lot, remember that I weigh over 400 pounds!), and I also take nutritional supplements during the day, including a B-vitamin supplement and a multivitamin. Following the jump, you’ll get to see what I had to eat on Monday!

DNFL Inter-Conference Play Follow-Up

So, Fantasy Football Week 7 has come and gone, and with it, the first annual DNFL Inter-Conference face-off. This year, Conference 1 has won handily, going 8-3-1 according to the unofficial scoring. I made a video celebrating a particularly poignant win for a hard-luck conference 1 team. You can see it after the jump… Read more…

Fantasy Football Smack-libs! (TM)

I play fantasy football in a 2-conference, 24-team league. It’s kind of unusual as fantasy football leagues go, since each conference is essentially its own league, a player can be on a roster in each conference. Despite this, we do have a week of inter-conference play every year, and this is the week! During this week, the smack talk heats up, with people who aren’t used to running smack attempting to do so. In an attempt to help fantasy football owners with absolutely no message board game, I came up with a special service. After the jump, you can read the post I made to our message board on DNFL Snack-libs! (TM). Read more…
